Dandelion Gravy
Dandelion Gravy is an moderately easy dinner. Made with 1/2 lb. bacon, 1 heaping t. flour, 4 c. milk, 1 t. vinegar and 1 1/2 c. dandelion greens, watercress or endive, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Fry bacon, reserving 1/2 c. grease.
Add flour to grease and stir until toasted.
Add milk, stirring briskly with a wire whip.
Add salt, vinegar, sugar and cheese and stir until mixture comes to a boil.
Just before serving, fold in crumbled bacon, eggs and greens.
Serve over mashed potatoes.
