Cucumber Salad
Cucumber Salad is an moderately easy dinner. Made with 2 cucumbers, salt, 1/4 c. white vinegar, 2 tsp. sugar and 1 small purple onion, thinly sliced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Peel and seed cucumbers and slice thinly (food processor works fine).
Place in colander and salt heavily.
Place plate with weight on top to press out moisture.
Allow to stand for several hours.
Rinse thoroughly and return to colander to drain, replacing plate and weight.
When as dry as possible, add remaining ingredients except for dill; chill thoroughly.
Add dill to taste just before serving.
