Crusty Potato Tidbits
Crusty Potato Tidbits is an moderately easy dinner. Made with 2 lb. russet potatoes, 2 tbsp. milk, 3 tbsp. butter, 1/4 tsp. salt and 1/8 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Scrub potatoes; quarter.
Place in saucepan with 1/2 inch boiling, salted water.
Cover and bring to boil; reduce heat and simmer, covered, about 20 minutes or until tender.
Peel potatoes; mash with milk, butter, salt and pepper.
Stir in cheese and onion; mix well.
Shape mixture in balls about 1-inch in diameter.
Dip potato balls into beaten eggs, then roll in crushed cornflakes.
Place on greased baking sheet and bake at 400Β° for 10 minutes or until balls are hot and crusty.
Makes about 70 appetizer balls.
