Crunch Top Banana Loaf
Crunch Top Banana Loaf is an moderately easy dinner. Made with 2 c. rice cereal squares, 3/4 c. chopped pecans, 2 tbsp. brown sugar, 1 tbsp. melted margarine and 1/2 c. margarine, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Crush cereal with rolling pin to make 1 cup crumbs.
Combine 1/4 cup cereal crumbs and 1/4 cup pecans, brown sugar and 1 teaspoon melted margarine; set aside.
Cream the margarine and sugar until fluffy.
Add egg, banana and buttermilk; mix well. Stir together flour, baking powder, baking soda and 1/4 teaspoon salt.
Add to creamed mixture; mix well.
Fold in remaining cereal crumbs and nuts.
Turn into greased 9 x 5 x 3-inch loaf pan. Sprinkle reserved crumb mixture on top.
Bake at 350Β° for 55 to 60 minutes.
Cool 10 minutes; remove from pan and cool completely. Makes 1 loaf.
