Crisp Pickle Slices
Crisp Pickle Slices is an moderately easy dinner. Made with 4 qt. sliced cucumbers (medium sized), 6 medium white onion, sliced, 2 green peppers, chopped, 3 cloves garlic and 1/3 c. rock salt (ice cream salt) or plain salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Do not pare cucumbers; slice thin.
Add onions, peppers and whole garlic cloves.
Add salt; cover with cracked ice.
Mix thoroughly.
Let stand 3 hours; drain thoroughly.
(I sometimes leave overnight, adding enough ice to last.) Combine remaining ingredients; pour over cucumber mixture.
Heat just to boiling. Seal in hot, sterilized jars.
Makes 6 to 8 pints.
