Creamy Rice Pudding(No Baking)
Creamy Rice Pudding(No Baking) is an moderately easy dinner. Made with 1/2 c. regular rice, 1 c. water, 4 1/4 c. milk, 1/4 c. raisins and 1/2 c. plus 1 tbsp. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Combine rice and water.
Cook on medium heat for 10 minutes. Add 4 cups milk, raisins, sugar and salt.
Cook slowly for about 25 minutes.
Stir frequently.
When rice is very tender, add egg yolks mixed with remaining 1/4 cup milk.
Stir constantly.
Stir until slightly thick and mixture coats spoon.
Remove from heat. Add vanilla and butter; cool.
Dust with nutmeg when serving. Makes lots.
