Shortening, butter sugar until light and fluffy.
Add egg yolks, one at a time, beating well after each addition.
Combine flour, soda creamed mixture alternately with buttermilk; beginning and ending with flour mixture.

Beat egg whites until frothy; add cream of tartar and continue beating until egg whites are stiff but not dry.
Fold egg whites into batter.
Spoon batter into 3 greased and floured 9-inch cake pans.
