Cream of "Whatever" Soup
Cream Of "Whatever" Soup is an moderately easy dinner. Made with 1 medium onion, diced, 4 oz. butter, 4 oz. flour, 1 1/2 lb. diced potatoes, cauliflower, fresh spinach, broccoli (including stems), carrots or cabbage and 1 1/2 qt. water, this recipe delivers authentic, satisfying flavors. Place diced vegetable in water and simmer until vegetable is cooked (about 1 1/2 hours).
Remove from heat.
In separate 2-quart saucepan, melt butter; add onion and saute until transparent.
Add flour and blend well.
Add vegetable and all broth; blend until mixture thickens.
Simmer 5 minutes.
Stir in hot half and half.
Salt and pepper to taste.
