Cream of Vegetable Soup
Cream Of Vegetable Soup is an moderately easy dinner. Made with 1 tsp. onion, minced, 2 tbsp. margarine, 3 tbsp. flour, 1 can mixed vegetables, drained and 4 c. milk or 2 c. milk and 2 c. chicken broth (i use both), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In medium saucepan saute onion in margarine until soft.
Blend in flour; cook until smooth and bubbly.
Slowly add milk and broth; bring to boil; add vegetables, salt and pepper.
