Cream of Corn Soup
Cream Of Corn Soup is an moderately easy dinner. Made with 3 strips bacon, finely chopped, 2 tbsp. finely chopped onions, 2 c. fresh or frozen corn, thawed, 2 tbsp. butter and 2 tbsp. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Fry bacon until crisp.
Remove most of the bacon from pan and add onions.
Saute until soft.
Put corn through a food processor or blender and add to onions and bacon.
Cook until mixture begins to brown.
Add butter; when melted, stir in flour.
Cook slowly for 5 minutes.
Add milk and cook until thickened.
Stir in the cream and heat thoroughly.
Serve in bowls.
Sprinkle with bacon and parsley.
