Cream of Carrot Soup
Cream Of Carrot Soup is an moderately easy dinner. Made with 1 lb. carrots, scraped and sliced, 4 c. chicken broth, 1 onion, chopped, 4 tbsp. butter and salt and pepper to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Simmer carrots in chicken broth until tender, about 15 minutes.
In another pan, saute onion in butter until limp, but not browned.
PurΓ©e all in blender or food processor.
Add salt, pepper, cream and thyme.
Bring back to simmer, stirring constantly. Serve hot or chilled with a sprinkling of chopped parsley for garnish.
