Cranberry Relish Mold
Cranberry Relish Mold is an moderately easy dinner. Made with 2 c. cranberries, 1/2 c. sugar, 1 (3 oz.) cherry flavored gelatin, 1 c. boiling water and 1 (8 1/4 oz.) crushed pineapple, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Grind cranberries through food grinder, using coarse blade. Combine ground cranberries and sugar; set aside.
Dissolve gelatin in boiling water.
Drain pineapple, reserving syrup; add enough water to reserved syrup to make 1 cup.
Add syrup mixture to dissolved gelatin; chill until partially set.
Fold ground cranberry mixture, crushed pineapple, chopped celery and chopped walnuts into partially set gelatin.
Pour into 5-cup mold.
Chill until firm.
Unmold to serve.
Makes 6 to 8 servings.
Great with turkey at Thanksgiving!
