Cranberry-Pear Chicken
Cranberry-Pear Chicken is an moderately easy dinner. Made with 1 pkg. boneless chicken breasts, 1 tbsp. vegetable oil, divided, salt and pepper to taste, 1 onion, chopped (about 1 c.) and 3 firm pears, peeled, cored and diced or 6 canned halves, drained and diced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Trim and discard visible fat from chicken.
In a large nonstick skillet, over medium-high heat, heat 1 1/2 teaspoons oil. Sprinkle chicken breasts lightly with salt and pepper.
Brown about 2 minutes pre side.
Remove from pan and reserve.
Add remaining oil to skillet and cook onions until softened, about 4 minutes.
Add pears, cranberries, cinnamon and ginger.
Stir to combine well.
Place chicken on top of fruit and onions.
Cover and simmer 10 to 12 minutes until cooked through.
Serve with brown, wild rice.
