Cranberry Muffins
Cranberry Muffins is an moderately easy dinner. Made with 1 1/4 c. sugar, 1/4 c. butter or margarine, 2 eggs, 2 1/2 c. all-purpose flour and 2 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 400Β°. Cream together sugar and butter. Add eggs, one at a time, beating after each addition.
In a bowl, sift flour, baking powder and salt.
Add with milk to the sugar and butter mixture.
Stir by hand just to moisten ingredients. Stir in cranberries.
Spoon into 18 (2 1/2-inch) muffin cups, filling 3/4 full.
Bake 25 to 30 minutes. Makes 18 muffins.
