Cranberry Cherry Salad
Cranberry Cherry Salad is an moderately easy dinner. Made with 1 c. fresh or frozen cranberries, 1/2 c. sugar, 2 tbsp. grated orange rind, 1 1/2 c. boiling water and 1 (3 oz.) pkg. cherry flavored gelatin, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grind cranberries.
Add sugar and orange rind; mix well.
Let stand 30 minutes.
Stir in 1/2 cup boiling water to dissolve sugar.
Refrigerate while preparing gelatin.
Stir gelatin into 1 cup boiling water until dissolved.
Add 1/2 cup cold water; chill until slightly thickened.
Stir in cranberry mixture, celery, apples and walnuts.
Pour into 1 (3 cup) mold.
Cover; chill until set.
Unmold onto serving plate.
Makes 12 servings.
