Cousin Janet's Pumpkin Pie Squares
Cousin Janet'S Pumpkin Pie Squares is an impressive dinner. Made with 1 c. sifted flour, 1/2 c. quick cooking rolled oats, 1/2 c. brown sugar, packed, 1/2 c. butter or margarine and 1 lb. can pumpkin (2 c.), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Combine flour, rolled oats, 1/2 cup brown sugar and 1/2 cup butter in mixing bowl.
Mix until crumbly using electric mixer on low speed.
Press into ungreased 13 x 9-inch pan.
Bake 20 minutes at 350°.
Combine pumpkin, evaporated milk, eggs, sugar, salt, cinnamon, ginger and cloves in mixing bowl.
Beat well.
Pour into crust.
Bake for 20 minutes at 350°.
Combine nuts, 1/2 cup brown sugar and 2 tablespoons butter.
Sprinkle over pumpkin filling. Return to oven and bake an additional 15 to 20 minutes or until filling is set.
Cool in pan on rack.
Cut into 2-inch squares. Makes 2 dozen.
Top with a dollop of cream if desired.
