Microwave
In 3-quart casserole, microwave bacon on High until softened (2 1/2 to 3 minutes).
Add potatoes.
Cover; microwave on High, stirring after half the time, until potatoes are crisp-tender (5 to 8 minutes).
Stir in onions and green pepper.
Cover; microwave on High, stirring halfway, until crisp-tender, 2 to 2 1/2 minutes.
Pour off fat.
Stir together remaining ingredients, except cheese.
Pour egg mixture over vegetables; stir to blend. Cover; microwave on High, stirring halfway, until eggs are just dry and set, 4 to 5 minutes.
Sprinkle with cheese; let stand until cheese melts.
