Country French Potato Pie
Country French Potato Pie is an moderately easy dinner. Made with 2 (9 inch) deep dish frozen pie shells, 24 oz. cottage cheese, 3 c. mashed potatoes (4-5 large), 2 large eggs (or 3 medium) and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In blender or food processor, blend cottage cheese until smooth. Add mashed potatoes, eggs, salt, pepper, cayenne pepper and mix well. Gently stir in green onions (use a lot of the green part) and pour into pie shells. Top with Parmesan cheese. Bake at 425Β° for 50 minutes. Check the crust after 35 minutes. You may have to cover with foil if too brown. Allow to cool slightly before slicing. Slices will not hold shape if too hot. Makes 2 pies.
