Country Fair Cookies
Country Fair Cookies is an moderately easy dinner. Made with 2 c. flour, pinch of salt, 1 c. seedless raisins, 1 c. water and 1 1/2 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Sift flour, soda, salt, cinnamon and nutmeg onto waxed paper. Combine raisins and water in small saucepan, bring to boil.
Remove from heat, cover.
Cool to room temperature.
Beat shortening and sugar well.
Beat in eggs and vanilla.
Blend flour mixture until smooth.
Add cooled raisins with the liquid and oats.
Mix well. Cover bowl.
Chill at least 1 hour.
Drop cookies from rounded teaspoonful onto lightly greased cookie sheet about 2 inches apart. Bake in a 350Β° oven for 10 minutes or until evenly browned.
Cool on wire rack.
Store in tightly covered container.
Makes 94 cookies.
