Country Club Squash Casserole
Country Club Squash Casserole is an moderately easy dinner. Made with 8 medium yellow squash, 1/2 c. chopped onion, 8 oz. sour cream, 1/2 to 3/4 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Wash squash and trim off ends.
Cook squash and onion in boiling salted water until tender.
Drain and mash.
Drain again. Combine squash, sour cream, salt, pepper and basil.
Pour into a greased 2-quart casserole.
Combine bread crumbs, cheese, margarine and paprika.
Sprinkle over squash mixture.
Top with bacon.
Bake at 300Β° for 30 minutes.
