Corn Chowder
Corn Chowder is an moderately easy dinner. Made with 1 small red pepper, finely chopped, 3 green onions, finely chopped, 2 c. fresh or frozen corn, 1 3/4 c. skim milk and 1 tbsp. flour, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

In saucepan, add onions and pepper; cook until tender.
In processor, blend 1 cup milk, flour and 1 cup corn on low speed until smooth.
Stir corn mixture with the remaining cup of corn and other ingredients.
Bring to a boil, then reduce heat to low. Simmer, uncovered, for 5 minutes.
