Company Potatoes
Company Potatoes is an moderately easy dinner. Made with 6 large potatoes, 2 c. sour cream, 1 c. milk, 2 c. grated sharp cheese and 1/2 c. butter, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Boil potatoes (peeled) in salted water until cooked.
Chill. Shred.
In the top of a double boiler over hot water, melt butter; add cheese, a little at a time, reserving 2 tablespoons.
Mix together sour cream and milk.
Add to cheese mixture.
Add onions and stir together.
Add to shredded potatoes.
Put mixture in a large greased casserole dish.
Bake, uncovered, at 350Β° for 45 minutes.
Sprinkle with paprika; bake 5 more minutes.
Serve.
