Coffee Cake
Coffee Cake is an moderately easy dinner. Made with 2/3 c. shortening, 2/3 c. sugar, 2/3 c. cooked potatoes, sieved while hot, 2 eggs and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cream shortening and sugar, add warm potatoes.
Mix well, add eggs and salt.
Beat well.
Dissolve yeast in water and add alternately with flour.
Knead until smooth.
Let rise until double in bulk.
Roll out on floured board about 3/4 inch thick.
Place in greased pan, let rise.
Cover with cream or undiluted canned milk, sugar and cinnamon.
Bake 20 minutes at 350Β°.
Remove from oven and dot with cream or a thin glaze of cream and powdered sugar.
