Coconut-Pecan Pie
Coconut-Pecan Pie is an moderately easy dinner. Made with 3 eggs, 3/4 c. sugar, 1/2 c. margarine, melted, 2 tsp. lemon juice and 1 tsp. vanilla extract, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

In mixing bowl, beat eggs; add sugar, margarine, lemon juice and vanilla.
Mix well.
Stir in coconut and pecans.
Pour into pie shell.
Bake at 350Β° for 45 to 50 minutes or until set.
Cool completely.
Store in refrigerator.
(The recipe called for 1 1/2 cups sugar, but I use 3/4 cup of sugar.)
