Coconut Crisps
Coconut Crisps is an moderately easy dinner. Made with 2 c. all-purpose flour, 3/4 tsp. baking powder, 1/4 tsp. salt, 3/4 c. butter or margarine, softened and 1 c. sugar, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Preheat oven to 375Β°.
Combine flour, baking powder and salt in medium bowl.
Beat butter and sugar in mixer bowl at medium speed until light and fluffy.
Beat in egg and vanilla.
With mixer at low speed, beat in dry ingredients just until combined. Stir in coconut. Drop dough by level tablespoonfuls onto ungreased cookie sheets.
With bottom of glass dipped in flour, flatten each cookie to 1/4-inch thickness, then press with back of fork to form ridges.
Bake 10 to 12 minutes, until edges are golden.
Transfer to racks to cool.
Makes 3 dozen.
