Clams Casino
Clams Casino is an moderately easy dinner. Made with 24 little neck clams, 1 medium green bell pepper, chopped, 1 to 2 c. parmesan or romano cheese, 4 oz. sherry and 2 cloves garlic, minced, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Steam the clams and drain.
(Save the juice.)
Mix cheese, pepper, garlic and sherry. Spoon over the clams.
Add some of the reserved juice.
Melt butter.
Mix in bread crumbs and spoon over cheese mixture. Spoon more juice on top.
Top each clam shell with small piece of bacon.
Broil until bacon is done.
