Cinnamon Flan(Spanish)
Cinnamon Flan(Spanish) is an moderately easy dinner. Made with 1 c. sugar, 2 tbsp. water, 4 eggs, 1 (14 oz.) can sweetened condensed milk and 1 c. water, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine sugar and 2 teaspoons water in heavy small skillet. Cook, stirring constantly, until caramelized and syrup. Immediately pour into warm 4-cup buttered mold.
Tilt to coat bottom and sides of container while sugar is still hot.
Beat eggs well.
Add milk, 1 cup water, cinnamon and lemon peel.
Mix well. Pour into prepared mold.
Place casserole in longer pan containing hot water to level of custard.
Bake at 350Β° for 1 hour.
Cool completely. Loosen custard with knife.
Put on serving platter and spoon caramel over top.
Makes 4 to 6 servings.
