Cilantro Potatoes
Cilantro Potatoes is an moderately easy dinner. Made with 4 medium potatoes, 1/4 c. sliced green onions, 1/2 c. shredded monterey jack cheese, 1/4 c. low-fat ricotta cheese and 1/2 c. fresh cilantro, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Wash and bake potatoes in oven at 400Β° for 45 minutes to 1 hour or until done.
While potatoes are baking, combine the remainder of the ingredients and toss it lightly in a bowl.
When potatoes are done, remove from the oven and let them cool to the touch.
Cut the potatoes in half lengthwise and fluff with a fork.
Top each potato with approximately 1/4 of the topping mixture.
Return to oven or microwave just long enough to melt cheese.
Serve immediately.
