Christa's Tomato Chutney
Christa'S Tomato Chutney is an moderately easy dinner. Made with 3 lb. tomatoes, skinned and chopped, 1 lb. onion, finely chopped, 2 cloves garlic, finely chopped, cooking salt and 1 tbsp. curry powder, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Put tomatoes in bowl and sprinkle them with salt.
Cover bowl for 24 hours, put in fridge.
Mix the curry, flour and mustard in a bowl, add enough vinegar to make a paste.
Drain tomatoes, rinse off excess salt and place them in a preserving pan.
Simmer gently until just boiling, then cook for 5 minutes.
Dissolve the sugar with the remaining vinegar and add to the pan.
Simmer about 30 minutes.
Add the flour paste and cook for 5 minutes, stirring constantly.
Pour in hot sterilized jars and seal with vinegar proof tops.
