Cut chicken in eight pieces and simmer 2 1/4 hours in 1 gallon of water or until chicken is tender.
Remove chicken. Add beans, tomatoes, onions and potatoes to broth.
Simmer until beans are tender, about 1 hour.
Add hot water, if necessary, and stir to prevent scorching. Add corn and chicken, boned and diced, and seasonings; cook until corn is done. Serves 8 to 10.
