Chocolate Zucchini
Chocolate Zucchini is an impressive dinner. Made with 2 1/4 c. flour, 1/4 c. unsweetened cocoa, 2 1/2 tsp. baking powder, 1 1/2 tsp. baking soda and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

In a medium bowl, mix together flour, cocoa, baking powder, baking soda, salt and cinnamon; set aside.
In a large bowl, beat together sugar and margarine.
Beat in applesauce, eggs and vanilla until thoroughly blended.
Gradually add dry ingredients, mixing well.
Stir in zucchini.
Pour into a greased 9-cup Bundt pan. Bake in preheated 350Β° oven for 1 hour or until cake tester inserted near center comes out clean.
Cool slightly and dust with confectioners sugar, if desired.
Serves 12.
