Chitterlings
Chitterlings is an moderately easy dinner. Made with 10 lb. chitterlings, thawed, 1/4 c. vinegar, 2 bay leaves, 2 large onions, chopped and 2 stalks celery (with tops), chopped, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Wash chitterlings thoroughly.
Remove excess fat and grit. Place in a large pot with vinegar and seasonings. Cover with water.
Bring to a boil.
Place lid on pot and simmer 3 or 4 hours until tender.
Serve with spaghetti, cornbread and slaw.
