Chiratta Puttu
Chiratta puttu is Kerala puttu steamed in coconut shells, with rice flour and grated coconut forming soft cylindrical cakes. Served with banana and kadala curry, it is simple, fragrant, and naturally dramatic without needing any decoration.

Moisten rice flour with salted water until it resembles damp sand that clumps when squeezed.
Layer grated coconut and rice flour in coconut-shell puttu molds or a steamer tube.
Steam until the puttu is firm, fragrant, and cooked through.
Unmold carefully and serve with banana and kadala curry.
