Chili Con Queso
Chili Con Queso is an moderately easy dinner. Made with 1/2 c. finely chopped onions, 1 tbsp. margarine or butter, 2 medium tomatoes, seeded and chopped, 1 (4 oz.) can diced green chili peppers, drained and 1 c. shredded american cheese, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
In a saucepan, cook onion in margarine until tender.
Stir in tomatoes and peppers.
Simmer, uncovered, 10 minutes.
Toss cheese with cornstarch.
Gradually add to saucepan, stirring until melted.
Stir in hot sauce.
Heat through.
Serve with chips. Makes 1 3/4 cups (14 servings).
