Chili Cheddar Cornbread
Chili Cheddar Cornbread is an moderately easy dinner. Made with 2 c. yellow cornmeal, 1/2 c. all-purpose flour, 1 tsp. baking powder, 1 tsp. sugar and 1 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix cornmeal, flour, baking powder, sugar and salt together. Add milk, eggs and shortening.
Mix together.
Add onion and let stand 5 minutes.
Fold in cheese, corn, green chili peppers and red peppers.
Spoon about 1/3 cup batter into greased and floured 2 1/2-inch muffin cups.
Bake at 375Β° for 25 to 30 minutes.
Makes 15 muffins.
