Chili
Chili is an moderately easy dinner. Made with 3 lb. venison ground meat, 1/4 c. olive oil,, 6 tbsp. chili powder, 3 tbsp. paprika and 10 cloves garlic, finely chopped or 1 tbsp. powder, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In 6-quart pot over high heat, sear meat in olive oil until gray, not brown.
Add 1 quart water; mix well and simmer 1 hour, stirring occasionally.
Pour off all water; add all seasonings to meat in the 6-quart pot.
Add 1 quart water.
Simmer 30 minutes and adjust taste.
Add cayenne pepper for heat.
Thicken with cornmeal blended with water into a paste and stir well.
Add beans for added flavor and shredded cheese to make it even better.
