In large skillet over medium high heat, heat oil until hot. Add chicken quarters and cook, turning once until golden brown on both sides.
Remove chicken; drain grease.
Return chicken to skillet.

Cook until liquid is reduced by one half.
Stir in butter, salt and pepper.
Cover.
