Chicken Veronique
Chicken Veronique is an moderately easy dinner. Made with 2 whole chicken breasts, 2 tbsp. butter, 1 c. sliced fresh mushrooms, 2 tbsp. sliced green onion and 1/3 c. chicken broth, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Skin and bone chicken; cut into 1-inch pieces.
In wok or skillet, melt butter over medium heat.
Stir-fry mushrooms and onions, about 2 minutes.
Add chicken and stir-fry about 5 minutes.
Blend broth and flour.
Add to chicken and vegetables. Cook and stir until thickened and bubbly.
Stir in grapes and wine; heat through.
Serve over rice.
