Chicken Soup with Almonds
Chicken Soup With Almonds is an moderately easy dinner. Made with 1/2 c. blanched almonds, finely chopped, 3 tbsp. butter, 3 c. chicken broth, 1 tsp. minced onion and 1 bay leaf, finely crushed, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Melt the butter in a saucepan; add almonds and very lightly brown.
Set aside. In a large saucepan, add the chicken broth, onion, bay leaf and almond mixture.
Simmer for 15 minutes.
Stir flour and 1/4 cup of the milk until well blended.
Add the flour mixture, remainder of the milk, half and half, salt and pepper. Stir and simmer for 5 minutes or until hot.
Yields 6 servings.
