Chicken Soup
Chicken Soup is an moderately easy dinner. Made with 4 or 5 lb. chicken parts (legs or breasts), 1 bunch parsley, cut up, 8 stalks celery (include greens), cut up, 1 lb. carrots, cut up and 1 lb. canned tomatoes, cut up, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Put chicken in large (12-quart) pot.
Cover with ample water (8-quarts).
Add salt.
Bring to boil and turn down to simmer and skim off fat.
Add parsley, celery, carrots, tomatoes, onions and allspice.
Once all the vegetables are in, bring to a boil, then reduce heat to simmer for 3 hours.
