Chicken Pie
Chicken Pie is an impressive dinner. Made with 1 (2 1/2 to 3 lb.) broiler (chicken), 1 onion, quartered, 1 stalk celery, cut in large pieces, 1 tsp. salt and 1 tsp. dried basil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine first 7 ingredients in a Dutch oven.
Cover with water; simmer one hour.
Remove chicken from broth.
Reserve 1 1/2 cups broth.
Remove chicken from bone.
Saute celery, onions, carrots and potatoes in butter until crisp-tender.
Add flour, stirring until smooth.
Cook 1 minute.
Gradually add reserved broth and half and half.
Cook over medium heat until thick and bubbly.
Stir in salt, pepper and chicken.
Pour this mixture into pastry lined casserole.
