Chicken Parmesan
Chicken Parmesan is an moderately easy dinner. Made with 4 boneless chicken breasts, 2 cans italian style stewed tomatoes, 2 tbsp. cornstarch, 1/2 tsp. oregano or basil and 1/4 tsp. hot pepper sauce (optional), this recipe delivers authentic, satisfying flavors. Place chicken breasts in baking dish.
Cover with foil.
Bake in preheated 425Β° oven for 20 minutes.
Remove foil.
Combine tomatoes, cornstarch, oregano and pepper sauce.
Stir in dissolved cornstarch.
Cook, stirring constantly, until thickened.
Pour sauce over chicken; top with cheese.
Return to oven and bake 5 minutes, uncovered, or until heated through.
Garnish with chopped parsley and serve with hot, cooked rice, if desired.
