Chicken Dijon
Chicken Dijon is an moderately easy dinner. Made with 4 boneless chicken breasts (fillets), skin removed, 2 tbsp. butter (preferably unsalted), 2 small garlic cloves, 1 small onion, diced and 1 c. sliced mushrooms, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
In large skillet, melt butter and saute garlic.
Add chicken and brown evenly.
Remove chicken and keep warm.
To drippings in skillet, add onion and mushrooms.
Saute until tender.
Add mustard and heavy cream, stirring until blended.
Return chicken to skillet.
Cook on low heat until heated through.
Serve over rice.
