Chicken Cacciatore

Cut a broiler into small pieces.
In a deep frying pan with a cover, heat tablespoons olive oil; add chicken and brown until golden all sides.
(If desired, skin can be removed.) Add chopped onion, parsley, basil, salt and pepper. Brown together with chicken until onion is golden.
Pour over all 1/2 cup wine
(white or red).
Cover and let simmer for about a minute; add tomatoes that have been crushed with a fork.
Cover and simmer for 20 to 30 minutes or until chicken is tender. Makes 3 or 4 servings.
