Chicken Broth
Chicken Broth is an moderately easy dinner. Made with 1 stewing chicken, cut in large pieces (neck and giblets included), 2 qt. cold water, 2 onions, stuck with several whole cloves, 3 to 4 celery stalks (including leaves), cut in pieces and 3 to 4 carrots, scraped and cut in pieces, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash chicken and pat dry; put in soup kettle and cover with 2 quarts of water.
Bring to a boil.
Skim foam and lower heat. Cover kettle and simmer for 2 hours.
Add onions, celery, carrots and bay leaf.
Simmer an additional hour, skimming foam as necessary.
Remove from heat and cool.
