Chicken and Artichoke Casserole
Chicken And Artichoke Casserole is an moderately easy dinner. Made with 3 to 3 1/2 lb. chicken, cut up, 1 tsp. salt, 1/4 tsp. pepper, 1/2 tsp. paprika and 4 tbsp. butter or margarine, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Rinse chicken and pat dry.
Sprinkle with salt, pepper and paprika.
In frypan, brown chicken pieces in melted butter. Transfer chicken to a shallow 3-quart casserole and arrange artichokes in between.
Set aside.
Drain all but 3 tablespoons drippings from frying pan; add mushrooms and cook until golden. Stir flour into mushrooms and cook 1 minute.
Then add broth, sherry and rosemary.
Cook, stirring, until thickened.
Pour sauce evenly over chicken and artichokes.
Cover and bake in 375Β° oven for 40 minutes.
