Cheesy Stuffed Squash
Cheesy Stuffed Squash is an moderately easy dinner. Made with 6 medium squash, 1/2 lb. bacon, 1 small chopped onion, paprika and 3/4 c. soft bread crumbs, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Wash squash and boil in salted water for 8 to 10 minutes. Drain and cool slightly.
Remove and discard stems.
Cut in half lengthwise and remove pulp and keep shells.
Cook bacon in large skillet until crisp; drain well, reserving 2 tablespoons bacon drippings in skillet.
Crumble bacon and set aside.
Saute onion in bacon drippings until tender; stir in bacon, crumbs and pulp.
Put mixture into shells and top with cheese.
Broil for 5 minutes. Sprinkle with paprika.
