Cheese Wafers
Cheese Wafers is an moderately easy dinner. Made with 2 c butter or margarine, softened, 1 lb block sharp cheddar cheese, shredded, 4 c all purpose flour, 1/2 tsp salt and 1 to 2 tsp ground red pepper, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Beat butter and cheese at medium speed with an electric mixer until blended; and flour and remaining ingredients, beating until blended.
Cover and chill 2 hours.
Shape dough into 4 (8 inch) logs; cover and chill 8 hours.
Cut into 1/4 inch slices and place on ungreased baking sheets.
Bake at 350 degrees for 15 minutes. Remove to wire racks to cool.
Store in an airtight container. Yields
10 dozen.
