Cheese-Stuffed Peppers
Cheese-Stuffed Peppers is an moderately easy dinner. Made with 6 green peppers, 1 1/2 c. cottage cheese, 2 1/2 c. cooked rice, 1 egg and salt and pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Wash peppers.
Cut off about 1/2 inch of the tops.
Remove stems, seeds and white fiber.
Drop into boiling salted water; cook about 5 minutes, or until barely tender.
Drain.
Mix the remaining ingredients, except for the bread crumbs.
Taste to check seasoning; pepper may be needed.
Add the chopped pepper tops.
Fill the peppers with this mixture.
Top with bread crumbs and place in a buttered baking pan.
Bake at 375Β° for about 25 minutes.
