Cheese Potato Casserole
Cheese Potato Casserole is an moderately easy dinner. Made with 8 to 9 medium potatoes, 1/3 c. chopped green onions, 1 c. sour cream, 1 can cream of chicken soup and 1 1/2 c. grated cheese, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Boil potatoes with skins on.
Cool, peel and dice; set aside. In large pan, melt butter.
Turn off heat.
Add green onions, sour cream, chicken soup and grated cheese; mix well.
Add potatoes. Put in a 2 1/2-quart baking dish.
Top with crushed potato chips. Bake at 350Β° for 25 to 30 minutes, until hot throughout.
Can be made a day ahead and kept in refrigerator.
Serves 8 to 10.
